Why measuring whole almonds by cup goes wrong

Whole raw almonds with skins weigh about 143 grams per cup. Sliced almonds — the same nuts cut paper-thin — weigh 92 g/cup because there is so much air between the slices. Slivered almonds (small matchsticks) split the difference at about 108 g/cup. This is the clearest example on the site of why the form of an ingredient matters as much as its identity.

Practical tips for working with whole almonds

Toast almonds in a dry skillet over medium heat for 4–6 minutes, stirring constantly, until you can smell them. Cooled toasted almonds keep for a week in a sealed jar at room temperature and improve every salad and roasted vegetable you put them on. Untoasted almonds are correct for almond flour and for desserts that want the raw flavor, like marzipan.

Note from this ingredient's record: Raw, unblanched. Sliced almonds pack much lighter (about 92 g/cup) because of all the air gaps.

Substitutions that work — and what they cost you

  • Any form of almond for another

    Ratio: Match by weight, never by volume

    Trade-off: Whole, slivered, and sliced almonds differ by up to 50 g per cup. A cup-for-cup swap changes the recipe substantially.

  • Hazelnuts or pecans for almonds

    Ratio: 1:1 by weight

    Trade-off: Different flavor, similar fat and behavior in baking. Hazelnuts need their skins rubbed off after toasting or they turn bitter.
